Cheesy Potato Balls

Ingredients

4 small potatoes, peeled
½ tsp. Flavo-Magic™
¼ tsp. cayenne pepper
4 oz shredded cheddar cheese
1 large egg
2 tsp. 1% milk
2 tbsp. wheat germ
2 tsp. soft, light margarine
2 tsp. chopped parsley
 
 
Cook and mash potatoes. Mix potato, Flavo-Magic™, cayenne pepper, cheddar cheese, egg, and milk until smooth. Use a tablespoon to scoop potato balls. Dip balls in wheat germ until evenly coated.

Heat margarine in frying pan. Fry potato balls until golden brown and crispy. Sprinkle with parsley.

Serves four.
One serving 1/8 protein, 1¼ starch, ½ fat, 1 dairy.
