Photos are not exact representations of the prepared recipe. 8 tbsp. fat-free sour cream 2½ tbsp. freshly-squeezed lime juice ½ tsp. artificial sweetener ¼ tsp. ground cumin ¼ tsp. chili powder 20 oz skinless chicken breast 1 cup sliced green bell pepper 1 cup sliced red bell pepper 8 tbsp. fat-free salsa 2 tbsp. chopped fresh cilantro 6 cups shredded romaine lettuce 2 oz shredded cheddar cheese | ||
| Combine sour cream, one and a half tablespoons of
lime juice, artificial sweetener, cumin, and chili powder in a bowl.
Refrigerate until ready to use. Cut chicken breast into strips and cook in a nonstick wok over medium-high heat until browned. Add bell peppers and cook for three minutes. Add salsa and cook for two minutes. Add remaining lime juice and cilantro. Mix well. Remove from heat. Spread romaine lettuce over four plates. Top with chicken and peppers. Remove dressing from refrigerator. Spoon over salad. Sprinkle with cheddar cheese. Serves four. One serving equals 1 protein, 2 vegetable, ½ dairy, 1 free exchange. | ||
