Chicken in Peach Sauce

Ingredients

2 small peaches
2 skinless chicken breasts (5 oz. ea.)
2 tsp. soft, light margarine
1/8 tsp. black pepper
¼ tsp. thyme
1 tbsp. parsley
4 oz. rosé wine
2 tbsp. fat-free mayonnaise
 
 
Skin and dice peaches.

Cook chicken breasts. Set aside, keeping warm.

Heat margarine in a pan. Add peaches, black pepper, thyme, and parsley. Sauté until smooth. Add rosé wine and mayonnaise. Gently simmer for a few minutes. Serve over chicken.

Serves two.
