Magic Barbecue Sauce |

Ingredients 2 tbsp olive oil 1 cup onion, chopped 3 garlic cloves, crushed 1 cup chipotle pepper, chopped 3 cups tomato, chopped with juices 1/2 cup cider vinegar 3 tbsp fresh lime juice 2 tbsp brown sugar substitute 1 tsp Flavo-Magic™ 1/2 tsp cumin 1/2 tsp coriander |

Heat olive oil in a saucepan over medium heat. Cook onion and garlic until the onion is soft. Soak chipotle pepper in boiling water for 30 seconds. Drain and cool. Wearing rubber gloves, coarsely chop the chipotle. Add to onion-garlic mixture and cook another 10 minutes. Add remaining ingredients and simmer for 30 to 45 minutes. Let cool. Puree in a food processor. Store in a jar in the refrigerator/ Makes 4 cups 3 tbsp equals: 1/4 vegetable, 1/4 fat | |
